Cut the raw mangoes into small pieces and mix it with all the spices like mustard seeds, fennel seeds, fenugreek seeds, nigella seeds, turmeric powder, salt, chilli powder and jeera powder. Now mix the spices with mango pieces and keep this mixture under sunlight for 3-4 days. Transfer the dried mixture into a jar and pour mustard oil in the jar. The jar should be completely filled with the mustard oil and the pieces of spiced mango should be soaked in the oil. Keep this jar for 4-5 days and your pickle is now ready to be served with Indian rotis, aaloo paratha etc. This pickle can be further kept and used for near about 1 year.

5.) Gujarati Aamras: Aamras is one of the favourite delicacies of Gujarat/Rajasthan. Add small pieces of mango, sugar, cardamom powder, milk and saffron in a blender and mix it well. Pour the pulp in a small bowl and put it in a freezer, for near about 2-3 hours. Your Aamras is ready to be served with hot puris and kachoris.
